- The Savary Secret: Always use filtered, cold water. Heat your water to right around 93°C to 96°C (200°F)—just off a rolling boil—to avoid scalding the delicate flavor notes of the roast.

- The Grind: Grind your Mexican Chocolate beans to a Medium consistency (resembling sea salt).
- The Measure: For a standard 12 oz ceramic Savary mug, use 3 level tablespoons of grounds to 12 oz of hot water.
- The Steep: If using a Pour-Over or French Press, let the grounds "bloom" by pouring just a splash of hot water over them for 30 seconds before filling the rest of the vessel. This releases trapped gasses and unlocks the deep, warming chocolate and spiced cinnamon notes.
